Adjunct professor in nutrition and dietetics

POSITION SUMMARY:
This Bluffton University adjunct faculty position will be appointed by the Health Sciences, Natural Sciences and Mathematics Department Chair, Nutrition and Dietetics Program Director and vice president and dean of academic affairs. 

COURSE DESCRIPTION:
NTR 305 QUALITY FOOD PRODUCTION (4)
This course will give students and introduction to the principles and practices of large-scale foodservice production management. The course prepares students to achieve ServSafe manager level sanitation certification and the ability to acknowledge critical control points within production. This course reviews the basic food production conversions for quantity production as well as the development of standardized recipes. Three lectures, three hours of laboratory work per week. Prerequisite: NTR 210.

 MINIMUM QUALIFICATIONS:

  • RDN with Masters Degree in Nutrition, Dietetics, or related field.
  • Proficiency in or ability to learn and use a learning management system software (Moodle). 

PREFERRED QUALIFICATIONS:

  • College-level teaching experience in composition or related areas.
  • Commitment to student-centered and inclusive pedagogy.
  • Understanding of or willingness to engage with Bluffton’s mission as a liberal arts institution in the Anabaptist-Mennonite tradition.

RESPONSIBILITIES:
Teach an undergraduate course in Nutrition and Dietetics.  Adjunct faculty members are on work agreements that run from one week before classes begin each semester through the day grades are due at the end of the semester.  Occasional meetings may be needed during the semester.   

COMPENSATION:
Commensurate with education and experience within the university pay scale.

PHYSICAL DEMANDS/WORK ENVIRONMENT:
Primarily a sedentary position with hours of in-person classes per week (based on course assignment).
